Instructions:
- Cook quinoa: Rinse quinoa, add it to boiling water, and cook for 12โ15 minutes until soft. Let it cool.
- Grill veggies: Heat olive oil in a pan. Add zucchini, carrot, and bell pepper. Sprinkle salt, pepper, and cumin. Sautรฉ until lightly charred.
- Mix: In a bowl, combine quinoa, grilled veggies, and chickpeas.
- Top: Drizzle with lemon juice, add yogurt if desired, and garnish with herbs.
